These vegan strawberry energy bites are packed with protein and superfoods, simple to make and satisfying! They are soft, chewy, and loaded with a variety of flavors from healthy ingredients. It is a perfect healthy alternative for a quick snack, gives you an energy boost prior or post workouts, and can be enjoyed as a dessert! I like to think of it as a strawberry smoothie in a ball!
Vegan Strawberry Energy Bites
Ingredients and Instructions:
Prep time: 5-10 minutes || Cook time: N/A || Total time: 5 minutes || Yields: 12 - 14 bites
Ingredients:
½ cup Almonds
1 cup coconut shreds (use unsweetened)
¼ cup cashews
1 tablespoon chia seeds
1 cup oats
5 dates (make sure to remove the pits)
½ cup creamy almond butter (can use peanut butter)
1.5 cups washed strawberries
Instructions:
Remove stems and wash strawberries- mash with a fork and set aside
Mix almonds, coconut shreds (only ½ cup, leave the other half for coating), cashews in a food processor (until they are fine)
Add in oats, chia seeds, dates and do a quick pulse in the food processor
Transfer all the mixed ingredients in a bowl
Add the almond butter and mix it all together
Add in the strawberries and mix well
Line a plate with wax paper or gently spray a little bit of coconut oil
Take about 1-2 tablespoon of mixture and roll in a ball, coat the ball with the shredded coconut
Freeze for at-least 30 minutes
Enjoy!
Alternatives: I know that Sweety and Roshni are not fans of cashews, so if you don’t like cashews, you do not have to use it. Instead just add a little bit more of almonds or walnuts and of course, you can use peanut butter instead of almond butter.
You can store the rest in an airtight container for about a week in the refrigerator and two weeks in the freezer. The vegan strawberry energy bites are perfect. Especially when 9PM hits and you are craving for “something sweet” but don’t want to feel “guilty” ;)
